Chocolate Peanut Butter Banana Chia Seed PuddingThe obsession with chia seeds and chia seed pudding continues. This is just another variation you can make! This is very similar to my Chocolate Nutella Chia Seed Pudding, but I actually think the peanut butter makes this a bit more flavorful! The main takeaway is just that you can make pretty much any type of chia seed pudding that your heart desires! This will likely be my last chia seed recipe unless I come up with something really unique and creative, but be assured that I am still making it and trying all different types of variations!

Prep Time: 5 minutes
Cook Time: 0 minutes (inactive 8 hours)

Ingredients:

  • 1/4 cup chia seeds
  • 1 cup chocolate almond milk
  • 1/2 cup 0% fat plain Greek Yogurt
  • 1/2 cup low fat vanilla yogurt
  • 3 tbsp peanut butter (Skippys for life!)
  • 1 banana (pureed)
  • 1 tsp vanilla extract

Directions:

Place all ingredients in a medium bowl. IMG_2236Whisk until ingredients are well combined. IMG_2237Cover the bowl tightly with saran-a-wrap and refrigerate overnight. The next morning it will have thickened and developed a pudding-like consistency. Serve pudding and top with fresh strawberries (or whatever toppings you like!). Enjoy!IMG_2247

    Wow, Panda- I cannot believe how easy and effortless this recipe is- I must try it! ( and to think that, before your blog, the only thing I knew about Chia was those Chia pets, where you spread the seeds and watch them grow!!) This is definitely more appealing!
