Disney World Edition: Cream Cheese Brownies

Cream Cheese BrowniesWe are back from Disney World! It was such an amazing trip and I will be sharing some awesome photos with you all shortly. Now, this is my first Disney inspired recipe. We had a delicious slice of brownie cheesecake at Disney’s Boardwalk Bakery and I wanted to create something similar. I decided to go with cream cheese brownies, using a very similar recipe as that from the Boardwalk Bakery for the brownie component. The key to these is to not over-mix the two layers when you are trying to get that fantastic marbled look (I accidentally did a little bit). I hope you all enjoy these as much as we did! Cook Time: 30 minutes


For the brownie layer

  • 1 1/2 cups sugar
  • 1 1/4 cups flour
  • 2/3 cups cocoa powder
  • 1 tsp salt
  • 1/2 tsp baking powder
  • 4 eggs
  • 2 sticks butter (melted)
  • 1/2 cup semi sweet chocolate chips

For the cream cheese layer

  • 8 oz reduced fat cream cheese
  • 1/3 cup granulated sugar
  • 1 egg
  • 1/2 tsp vanilla


Preheat oven to 350 F. Sift together sugar, flour, cocoa powder, salt and baking powder in a large mixing bowl. Beat flour mixture and eggs on low speed using an electric mixer until smooth. IMG_2998Slowly add in melted butter and beat until combined.IMG_2999 Fold in the chocolate chips. IMG_3000IMG_3001Transfer batter to a greased 13 x 9 baking pan. IMG_3002Next, beat cream cheese with electric mixer on medium speed until smooth. Then, add the sugar and mix. Add vanilla and egg and mix until well-blended. IMG_3003Spoon the cream cheese mixture in dollops over the whole brownie pan, leaving some brownie showing in between. IMG_3004Swirl through the batter with a fork for a marbled effect. Here is where you need to be sure to not overdo it- I got a little overzealous and wish I had mixed less. You should have more white showing n the top. IMG_3006

Bake your cream cheese brownies for about 30 minutes, or until a toothpick inserted into the center comes out clean. In my case, I just stabbed the guy with a fork- you can see the fork marks – whoops. But I found out it was done- just a less glamorous way of doing it.     Panda Bear- I finally made these brownies yesterday- they are out of this world!! And, as your mother, I must confess- even with all my years of baking, I had never before made homemade brownies- I always cheated, and relied on Betty Crocker instead. These are easy, and the addition of the cream cheese makes them even yummier!!
    Thanks again for a terrific recipe- Marv and i each had one with an iced cold glass of milk last night! Delish!
