Strawberry, avocado quinoa saladWith the warm weather flooding in, we have been craving more refreshing, summery (this might not be a word) tastes. This fresh quinoa salad combines summer flavors like strawberries and avocado and makes for delicious snack or meal! I was lucky enough to have some cooked quinoa laying around so this made for a super speedy meal, which we were in need of as we are currently tackling several DIY projects. We are moving into a shiny new apartment on July 15th and have decided to stain a whole bunch of furniture, so we are busy bees (will update the blog with the finished results). Anyways this is a fantastic and quick recipe that we both loved. Hopefully you all feel similarly!

Cook Time:  0 minutes (provided you have cooked quinoa on hand)

Ingredients:

For the salad

  • 1 cup cooked quinoa
  • 2 ripe avocados, peeled, pitted and cubed
  • 2 cups strawberries, cut up
  • 1/3 cup candied walnuts
  • 1/2 cup fat-free feta

For the vinaigrette

  • 2 tbsp lime juice
  • 3 tbsp EVOO
  • 2 tsp honey
  • 1 tsp dijon mustard
  • salt and pepper to taste

Directions:

Get all your salad ingredients together. IMG_3084When cooking my quinoa I added in some salt, pepper and a little bit of cumin to make it extra tasty. If you do not have cooked quinoa on hand, or if you are unfamiliar with how to cook quinoa, feel free to reference this past recipe of mine or this informative link. Toss all ingredients in large bowl. Mix all vinaigrette ingredients in a small bowl using either a whisk or fork until ingredients are well combined.IMG_3086 Pour dressing over salad ingredients and toss.
