Beef, Corn and Green Chili TacosIt’s Tuesday which means that we are craving some tacos! Nevin and I try to celebrate Taco Tuesday about once a month, but we often rely heavily on the Taco Dinner Kits you can buy at the Supermarket. The reason being simple: we are busy and we want a quick, easy, and satisfying dinner. Although the taco dinner kits are great, especially when dressed up with fresh toppings, they still leave something to be desired. This past Tuesday, I decided that I wanted to make my own seasoning and do tacos right. Making your own seasoning takes less than 1 minute and really does make a substantial difference in flavor. The addition of green chilis, corn, onions, and peppers gives these tacos a different flavor and a more interesting texture than just plain ground beef. I think these would be delicious with chicken too, we just didn’t have any on hand. Let me know what you think!

Cook Time: 15 minutes

Ingredients:

For the seasoning

  • 1/2 tbsp chili powder
  • 1 1/2 tsp ground cumin
  • 1/4 tsp garlic powder
  • 1/2 tsp crushed red pepper flakes
  • 1/4 tsp dried oregano
  • 1 tsp salt
  • 1 tsp pepper

For the tacos

  • 1 lb lean ground beef
  • 2/3 cup water
  • 1 can green chilis
  • 1/2 15oz can corn (drained and rinsed)
  • 1/2 tbsp olive oil
  • 1/4 onion, chopped
  • 1/2 red pepper, chopped
  • 1/2 green pepper, chopped
  • 1 tbsp lime juice
  • 10 6″ corn tortillas
  • avocado, sour cream, lettuce, cheese, taco sauce for serving

Directions:

Combine all the ingredients for the seasoning in a small bowl and set aside. IMG_3176Brown ground beef in a skillet. Drain when the meat has browned. IMG_3177Then, stir in water, all your seasoning, your corn and green chilis. IMG_3178Heat until the mixture starts to boil, then reduce the heat and let it simmer, uncovered for 3-4 minutes. Stir frequently, until the mixture thickens.IMG_3179

Meanwhile, heat the oven to 350 F and warm your corn tortillas on a baking pan. IMG_3181

In a separate skillet, heat olive oil over medium high heat. Chop up your onions and peppers. IMG_3180When hot, add your onions and peppers. Cook until golden brown and fragrant. Add in your lime juice and stir well to combine. Set heat on low.

When tortillas are warm, remove from oven and plate. Add your meat mixture, then your peppers and onions. IMG_3183Finally, top with avocado, sour cream, lettuce, cheese and taco sauce (or whatever your heart desires!) IMG_3182This recipe yields about 10 tacos.
