Brownie Pudding

Brownie PuddingHello everyone! Sorry I haven’t been as active lately- it seems the time has gotten away from me. However, this recipe for brownie pudding will hopefully make up for lost time! This recipe creates almost a molten lava type dessert, with a flaky, brownie like exterior and a gooey, oozing chocolatey center. Drool-worthy. This dessert is incredibly rich and decadent, so you need to make sure to pair it with some vanilla ice cream and a tall glass of milk to avoid chocolate overload. This recipe is an adapted version from the Barefoot Contessa (told you Nevin had a crush :-0). Enjoy!

Prep Time: 20 minutes

Cook Time: 1 hour


  • 2 sticks unsalted butter
  • 4 eggs
  • 2 cups granulated sugar
  • 1 tsp vanilla extract
  • 3/4 cup unsweetened cocoa powder
  • 1/2 cup flour


Preheat the oven to 325 degrees F. Spray a pan with PAM. Melt the butter and set aside to cool.IMG_3208Mix together eggs and sugar using an electric mixer, until thick and light yellow in color. IMG_3209Meanwhile, sift the cocoa powder and flour together and set aside.IMG_3210When the egg and sugar mixture is ready, reduce the speed to low and add the vanilla and cocoa powder and flour mixture. Mix only until combined. IMG_3211With mixer still on low, slowly pour in the cooled butter and mix again just until combined.IMG_3212Pour the brownie mixture into the prepared baking dish.IMG_3213Then, place this dish into a larger baking pan. Add enough of the hottest tap water to the pan to come halfway up the side of the dish and bake for 1 hour. IMG_3214A cake tester inserted 2 inches from the side will come out 3/4 clean. The center will appear very under-baked- which is what accounts for the ooey gooey deliciousness :-)IMG_3215Allow to cool and serve with vanilla ice cream. First bite was out of this world but then the richness and sweetness started getting to me. I don’t have the biggest sweet tooth though, so hopefully you will all be able to find several bites AMAZING :-)

    Panda- boy, this recipe looks so yummy- for me, it brings back memories of you , as a little girl, always gravitating towards the Chocolate Lava cake dessert that Chili’s used to have on their menu!! ( and I remember how BUMMED you were when,, for whatever reason, they took it off!!) Ah, but now, you can make your own, whenever you have the urge for a gooey, sweet treat!
